Cultivation of the Kallmet olive variety and the oil produced from it have been inherited by all the families of the area, both for family consumption and for the market. All the families in the area have this variety and have produced the oil with traditional methods of foot pressing or stone mills. In addition to this autochthonous variety, other Albanian and foreign varieties have been cultivated in the area.
After harvesting in an earlier period, which is the end of October and the first half of November, the olives are sent to the oil factory using the cold processing method and centrifugal separation of the oil. The green color of the grain should dominate, they should be clean and processed immediately after harvesting The obtained oil is stored in stainless steel containers and left in the process of natural decantation for a period of 3-4 months. Then it is filled in glass bottles and goes directly to the market.
It is presented in green color, with the characteristic aroma of olive. The physico-chemical indicators that appear for the quantity produced, after being analyzed in the laboratory of ISUV (Institute of Food and Veterinary Safety), are presented on the product counter-label.
